Tonight comfort food with cheese.
For 4 people
Preheat the oven to 200 C. Mix the bell pepper with the onion, red pepper, paprika and a dash of oil in a bowl. Spread over a baking tray lined with baking paper and roast for 20 minutes. Transfer the roasted vegetables to a food processor and blend until smooth. Taste and season with salt and pepper.
Grease the baking dish with olive oil. Put the cooked penne together with the paprika sauce in a bowl and stir well. Divide the mixture over the oven dish and sprinkle with the grated cheese. Bake the muffins for 20-25 minutes in the preheated oven.
